Two characteristics set the Maui onion apart from other yellow onions: the high sugar and high moisture content of its flesh.
Cantaloupe Melon
The cantaloupe is defined by two elements: its roughly netted stone and green colored skin and its aromatic orange-coral colored flesh. When perfectly ripe, the flesh is juicy, unctuous and sweet.
As Yukon Gold potatoes are a early-mid season variety, they are best planted in March to April, hence they are often in shorter supply in June and July.
Description/Taste
Yukon Gold potatoes are an early bearing variety that produce somewhat flattened globular shaped tubers. Their rough yellow-brown skin with shallow eyes surround a distinctive yellow moist & waxy flesh. When cooked the flesh is buttery and creamy.
Nutritional Value
Yukon Gold potatoes are rich in potassium, vitamin C, vitamin B-6, iron, niacin, calcium, and protein.
Applications
Yukon Gold potatoes are great for making french fries, as well as gratins and purees. They pair well with cream, garlic, bacon, white and red-fleshed fish and herbs.
Ethnic/Cultural Info
The potato originated in South America, spanning back to the early 1400s. There are 200 types of wild potatoes species, and potatoes are often used as feed for animals on farms. It was a Peruvian variety with a distinct yellow flesh and rich flavor that originally inspired the creation of the Yukon Gold.
Geography/History
Yellow fleshed potatoes are native to both Europe and South America. The Yukon Gold, however is a hybrid variety. Gary Johnston, considered an agricultural icon, bred the first Yukon Gold variety at Ontario Agricultural College in 1966 from a potato from North Dakota, called "Norgleam" with a wild South American yellow-fleshed variety (W5279-4). Before it was named for marketing and distribution, it existed as the pedigree, G6666-4y. Today the Yukon Gold grows throughout Canada, the Midwest and Western regions of America.
