Oval-to-round and a delicious cross between a cantaloupe and a honeydew, the very fleshy juicy orangish-yellow pulp of the orange honeydew melon is encased in a hard very yellow matching rind.

The deep purple color of the Stokes Purple® Sweet potato intensifies when cooked. The natural color of these root vegetables comes from the phytochemical, anthocyanin, which is also said to have preventative and therapeutic properties.
Description/Taste
The Stokes Purple® Sweet potato has a rugged purple skin and vibrant purple flesh. It is firm and dense, more so than a typical sweet potato and offers a different taste as well. The flesh is drier and has a lower moisture content than most sweet potato varieties. The Stokes Purple® is not as sweet as as their orange counterparts.
Nutritional Value
The Stokes Purple® Sweet potato is extremely high in antioxidants, similar to other purple superfoods like acai, blueberries and purple corn. Like other sweet potato varieties, it has a low glycemic index which essential for diabetics.
Applications
The Stokes Purple® Sweet potato can be prepared like most sweet potatoes; however, their lower moisture content should be taken into account. Adding one or two tablespoons of liquid to the recipe will achieve a more desirable consistency. The greater density of the Stokes Purple® Sweet potato requires a longer cooking time than other varieties of sweet potato. Serve these purple vegetables steamed and mashed, roasted, or shredded for potato pancakes. The vibrant color makes a striking pie. Caution when using baking soda in your Stokes Purple Sweet potato dishes, it will turn your bold purple to green.
Geography/History
The Stokes Purple® Sweet potato is an American-grown sweet potato. Its name is derived from the county in North Carolina where the sweet potatoes were originally grown. Stokes County, NC was traditionally a tobacco growing region until the sweet potatoes were introduced and farmers could use it as a replacement crop using the same equipment and farming techniques as tobacco. The Stokes Purple® Sweet Potato is a registered trademark of the Saura Pride Sweet Potatoes, LLC. They can also be found growing in the valley east of San Fransisco, California.
