Orange sprouting cauliflower forms small stalks with orange floret clusters at the very top. Like regular orange cauliflower, the stems are firm and tender, and the florets have a soft and crumbly texture. Its flavor is mild with nutty, sweet nuances. The orange color in this cauliflower is a result of a genetic mutation, which allows the vegetable to hold more beta carotene, or Vitamin A. Cauliflower, botanical name Brassica oleracea var. botytis, belonging to the plant order Capparales, is a cool season biennial. Sprouting cauliflower develops from buds located in the bases of the older leaves, and share similar characteristics to mature cauliflower but on a smaller scale. Orange sprouting cauliflower is an underutilized culinary ingredient because it is rarely left to develop.
