Scallions grow to .6 meters tall with hollow tube-like leaves and slender white roots. Their spherical white flowers emerge from a papery sheath that first appears at the stem’s tip as an elongated tear drop. The sheath falls away to reveal the globe-like flower 2-8 cm in diameter which consists of multiple tiny blossoms packed together. Scallion flowers have distinct onion aroma and flavor with a dry delicate texture. They have a sweet note when picked young just as the buds open, but may become bitter as the seeds ripen.
Scallion flowers are available in the summer.
Scallions, also called Welsh onion or bunching onion, are botanically named Allium fistulosum. As a member of the Lily family they closely resemble their onion cousins but do not develop the same large bulbs, and are instead grown for their mildly onion-flavored green stalks. The flowers share the same onion aroma and may be used similarly to chive blossom.
All members of the Allium family contain quercetin which can fight heart disease and cancer.
Scallion blossoms lose their structure when cooked, and are best used raw as a finishing herb. Add them to salads or float on top of soups. Fold them into bread or pasta dough to add a slight onion quality without being pungent. Use the blossoms along with the scallion greens in savory pancakes and raw herbal sauces such as pesto, salsa or chimichurri. Scallion blossoms compliment, potato, eggs, cream, ginger, lime, parsley, thyme and cuisines from Japan, China, Korea and Thailand.
Scallions were bred from a wild relative found in an area of northwestern China near Kazakhstan. They were then brought to Europe in the 1600’s. Today scallions are rarely found growing naturally in the wild, but are cultivated in most temperate climates. They may be harvested year-round where winters are mild, but otherwise die off when exposed to prolonged frost. They are a hearty plant that can grow in most soils with adequate drainage and full sun.
