Description/Taste
Resembling fresh ginger root, red sunchokes produce a knobby and bumpy, edible exterior that encases a potato-like interior. About three to four inches long and about one to two inches in diameter, no peeling is required to enjoy the wonderful flavor of this excellent tuber. Red sunchokes are sweeter than gold sunchokes due to the presence of a red pigment.
