
White Corn

Lettuce is categorized into four different types, also known as subspecies or botanical varieties. The four types of lettuce are head, romaine, butter and loose leaf. The word lettuce itself comes from the Latin lactuca, which is derived from lactus, meaning “milk”. The milk in this sense refers to the milky substance that appears when lettuce leaves are torn or cut from the plant. Although this does not happen with all lettuce types, it is very typical of red leaf lettuces. The milk is actually a signal that the lettuce variety will have some level of bitterness in its flavor, which occurs mostly in mature plants.
Description/Taste
Red leaf lettuce is the general name provided for dozens of varieties that produce semi-frilled textured loose leaf lettuces with deep red burgundy stains highlighting the tips of lime green to sea green outer leaves to pea green and cream colored inner leaves. The texture is consistently crispy and succulent and the flavor generally mild and subtly earthy with a buttery nuance.
Applications
Use red leaf lettuce in salads. Braise, add to soups at the end of cooking, add to sandwiches, use as a bed for proteins, use as a sandwich wrap.
Geography/History
Red leaf lettuces are a cool season crop, preferring warm full sun days and cool nights. They can tolerate several soil types from clay to sandy to rich, organic soil. They are best harvested once the leaves are four to six inches in length.
