The Purple Haze carrot is a hybrid variety that was named after the song written by guitarist and singer Jimi Hendrix. Purple carrots, in general, are becoming more commonplace as the demand for a wider variety of colors in one's diet is increasing.
Description/Taste
The Purple Haze carrot has a narrow taper-shaped root often growing up to 10 inches while coming to a long thin thread-like point. Its Barolo wine-colored skin thinly encases its crisp orange core. The root retains its color through light cooking, however loosing its vibrant color appeal as it cooks longer. Its flavor is both consistently earthy sweet and texture crispy.
Nutritional Value
Purple carrots are given their purple colour by anthocyanin, a powerful antioxidant that also gives blueberries and red grapes their colour.
Geography/History
Purple carrot varieties are actually one of the first originally cultivated varieties among all carrot colors. They can trace their origins back to the Middle East region of what is modern day Afghanistan. Originally used as a clothing dye by Afghan royalty, the purple carrot is now being investigated as a potential source of food colorings.
