Orange Honeydew Melon
Oval-to-round and a delicious cross between a cantaloupe and a honeydew, the very fleshy juicy orangish-yellow pulp of the orange honeydew melon is encased in a hard very yellow matching rind.

Of the dozens of edible amaranth plants, this Mix consists of three different varieties, all having gorgeously colored leaves. Even though the flavor is rather vague and somewhat like very subtle corn, its visual appeal is huge.
Anthocynins, a pigment that is released in the leaves to help protect the plant from the sun and to help pollinators find the flower, produce the lovely amaranth colors. Anthocynins, identified as antioxidants, are also believed to help fight cancer. The amaranth plant produces nutritious edible seeds that contain a high concentration of protein. Seasoned with honey, these seeds are frequently used as an ingredient in energy and health bars.
This Mix stands up well to acidic dressings and to heat. Delicious drizzled with vanilla oil and served as a salad.
