Fingerling Russian Banana Potatoes

The texture is consistently crispy and succulent and the flavor generally mild and insipid with a slightly bitter undertone. Bitterness generally occurs in maturing greens versus young greens.
Applications
Use green leaf lettuce in salads. Braise, add to soups at the end of cooking, add to sandwiches, use as a bed for proteins, use as a sandwich wrap. Shred and add to protein or veggie filling in tacos, wraps or burritos.

Green leaf lettuces are a cool season crop, preferring warm full sun days and cool nights. They can tolerate several soil types from clay to sandy to rich, organic soil. They are best harvested once the leaves are four to six inches in length.
