Description/Taste
The Green Apple eggplant is round, and two to four inches in diameter, with a mild, creamy texture. The skin color can range from a pale to bright green and is thin enough to not require peeling before use.
Nutritional Value
Eggplant is a great low-calorie food. With the small size of the Green Apple eggplant at about a cup, you could eat the entire thing for approximately 30 calories without any saturated fat or cholesterol.
Applications
The Green Apple eggplant is a recent favorite in southeast asian cooking including Laos and Thailand. The small size lends itself well to quickly chopping in half or quarters and adding to curries and salads. The Green Apple eggplant is also well shaped for stuffing, and may also be baked, roasted, boiled or stewed. Remove the tops, scoop out the flesh and fill with cooked rice and cheese, then bake until tender. Slice into rounds and layer with sliced tomato and basil, then bake into a casserole. Roast whole and serve with a mustard vinaigrette.
Geography/History
While various eggplant varieties have been around for a few thousand years, the Green Apple eggplant was only recently discovered in 1964 at the University of New Hampshire. Since it matures early in the season requiring less time in the heat, it is great for growing in northern climates that have a shorter summer as well as southern climates.
