Eight Ball squash’s outer skin is smooth and glossy with a deep forest green color and light green striations. The inner flesh is creamy white with light green hues and tiny, negligible seeds. Their flavor is similar in taste to the longer Italian zucchini, buttery and sweet with nutty accents that deepen with cooking. They generally range in size from one to four inches in diameter. The smaller sizes have the sweetest and most flavorful flesh, while the larger sizes are firmer, but excellent for stuffing. Squash that are larger than four inches have a tendency to develop a woody texture and hard unpalatable seeds.

The Eight Ball squash is a summer squash variety botanically classified as part of Cucurbita pepo and a member of the Cucurbitaceae family. A round zucchini hybrid the Eight Ball squash was the first of three round summer squash varieties developed by seed company Hollar Seeds in the late 1990’s. Eight Ball squash are commonly mistaken with similar round varieties, the Rond de Nice and Roly Poly, but the specific Eight Ball variety is believed to be vastly superior in flavor.
Eight Ball squash contains vitamins A and C, as well as potassium, folic acid and magnesium. Additionally it contains dietary fiber and has a high water content.
Eight Ball squash may be substituted for zucchini in most recipes. The unique shape of this summer squash variety is ideal for hollowing out and stuffing with meats, cheeses, nuts and grains. Eight Ball squash may also be steamed, baked, roasted or grilled as you would other summer squash. Slice thin and layer with other summer vegetables in a ratatouille or use in lieu of pasta in lasagna. Dice or slice and stir-fry with complimentary ingredients such as garlic, onions, eggplant, fresh herbs and spices. To store keep Eight Ball squash dry and refrigerated until ready to use. For best flavor and texture use Eight Ball squash within one week.
In the United States the Eight Ball squash was selected as a 1999 All-American Selections winner. A nonprofit, the All American Selections organization has reviewed seed grown flowers and vegetables since 1932 in efforts to introduce easy to grow, high quality varieties to the commercial market.
The Eight Ball squash is a fairly recent hybrid squash developed by Hollar Seeds of Rocky Ford, Colorado and released in 1999. President of Hollar Seeds Larry Hollar spent four years collecting seeds of round squashes from around the world and testing potential crosses until he produced what would come to be known as Eight Ball squash. Hollar Seeds would later go on to release other round varieties such as the yellow one ball squash and light green cue ball squash. Though rounded squash types have been popular in Europe for decades the Eight Ball was the first commercially successful variety to be sold in the United States. Eight Ball squash is known to be an extremely easy to grow variety and like many summer squash types should produce prolifically.
