Rainbow Swiss Chard
Rainbow chard, also known a 5-color silverbeet, is a tender chard variety with multi-colored stalks of yellow, white, orange pink and red.
Available during summer, and sporadically through the year.
Description/Taste
Baby corn is available in white and yellow varieties and is usually three to four inches in length. Eaten whole, baby corn is mature corn, simply picked at an earlier stage of growth, and has a much milder flavor than full-grown corn.
Nutritional Value
Low-fat, saturated fat-free, very low in sodium, cholesterol-free, baby corn is a good source of vitamin C. Eaten together, corn, beans and squash provide the 20 amino acids that form complete protein.
Applications
Baby corn is most often prepared whole-- boiled, or steamed and sauteed. Baby corn is also well-suited for pickling. To store, keep refrigerated. Use or freeze immediately after purchase for optimum taste and quality.
Geography/History
In the United States, Florida is the number-one corn producer with California ranking second. Georgia, New York and Illinois also contribute significant supplies to the marketplace. Some corn is imported from Mexico.
