Mixed summer squashes have soft, thin skin that is edible, with varying degrees of light to dense flesh depending on the variety. They can all be eaten raw or cooked, and have a mild flavor that can range from sweet to nutty. Their colors range from creamy white, striped and speckled pale green to green and yellow.
Mixed summer squashes are all botanically a member of Cucurbita pepo. They are harvested when immature while the rind is still tender and edible. There are numerous summer squash varieties on the market today with independent names and characteristics. Summer squash can also be harvested at varying stages of maturity, when petite and at its baby stage of growth or when slightly more mature and medium sized. Summer squash is treated as a vegetable. However, the summer squash is identified as the swollen fruit that stems on the female summer squash flower.
