Description/Taste
Celery root, also known as celeriac, is the underground tuber of a celery variety. Celery root is roughly globular, typically muddied, gnarled and full of slender taproots. The thin, but hardy skin surrounds a bright white, crisp, and crunchy textured flesh. The texture of raw Celery root is similar to that of an apple or raw potato, while cooked Celery root can be mashed or pureed. The firm, juicy flesh has a mild herbaceous quality and when cooked displays a potato, nuttiness, and celery-like undertones.
