Description/Taste
King Trumpet mushrooms are medium to large in size and are easily identified by their thick cylindrical stem and their small, flattened cap. The ivory to white stems can grow up to twenty centimeters in length, five centimeters in diameter, and are firm, dense, and chewy. The small, smooth caps are grey to brown and have rounded, curved edges. Underneath the cap, the stem and cap are joined by off-white, thin, short, gills. Raw King Trumpets, though dense and spongy in texture, lack aroma and flavor, but when cooked, the mushrooms have a savory umami flavor, a soft, crunchy texture, and a mild flavor reminiscent of abalone.

King Trumpet mushrooms, botanically classified as Pleurotus eryngii, are the largest edible variety in the Pleurotus genus and are members of the Pleurotaceae family. Also known as the Royal Trumpet mushroom, French Horn mushroom, Cardoncello, Eryngii, King Oyster, and King Trumpet, King Trumpet mushrooms are unique as they are resistant to extreme environmental conditions such as a hot desert or a humid climate. They are also unique in their symbiotic preferences as they feed off of the roots of herbaceous plants. King Trumpet mushrooms are rare to find in the wild and are predominately grown in a culture composed of agricultural waste, such as sawdust and straw, supplemented with cottonseed meal and grain by-products. They are cultivated all over the world and are highly valued in Asian culinary applications for their dense, chewy texture and seafood-like flavor.
Nutritional Value
King Trumpet mushrooms contain riboflavin, vitamins B6, C, and D, niacin, potassium, fiber, and folate. They also contain high amounts of a naturally occurring amino acid, ergothioneine, which is an antioxidant. This particular antioxidant is stored in organs like the liver and kidneys and helps reduce the risk of chronic disease.
Applications
King Trumpet mushrooms are best suited for cooked applications such as grilling, roasting, baking, sautéing, and frying. They can be sliced or torn into thick pieces and simmered or braised to create a crispy texture, or they can be cut into rounds to develop a tender, meat-like consistency. King Trumpet mushrooms are commonly used in stir-fries, soups, stews, tempura, chopped into meatballs or meatloaf, mixed into pasta, or grilled and served on top of barbequed meats. King Trumpet mushrooms pair well with legumes, grains, fish, poultry, scallops, Asian greens, ginger, garlic, chives, chiles, thyme, rosemary, peppercorn, soy, vinegar, dry white wines, blue cheese, grapes, and focaccia. They will keep 1-2 weeks when stored in a paper bag in the refrigerator.
Ethnic/Cultural Info
King Trumpet mushrooms are extremely popular and mainly cultivated in China and Japan for their chewy texture and seafood-like flavor. During the mid-2000s, King Trumpet mushrooms were almost twice as expensive as shiitake mushrooms in China because of the high demand and low cultivation. Often used as a meat substitute, King Trumpet mushrooms are a favorite vegan “scallop” as they mimic the texture and flavor of the seafood when cooked in butter and wine. In Japan, King Trumpet mushrooms are also commonly cooked in teriyaki sauce or are coated in honey, mirin, and soy sauce and grilled for a caramelized, smoky main dish.
Geography/History
Wild King Trumpet mushrooms are native to the Mediterranean regions of Europe, North Africa, and the Middle East and have been growing since ancient times. Today the mushrooms available for purchase at the market are mainly cultivated and are being grown in the United States, Australia, Italy, South Korea, Japan, China, and South Africa. King Trumpet mushrooms can be found at specialty stores and local markets in Asia, Europe, Africa, North America, and Australia.
