Purple Turnip tops are the root tubers of the turnip plant.The exposed turnip above the soil line during the growing process will be a bright purple color as its name suggest while the part that remains underground will be white. When harvested the turnips have a smooth skin and about 7 to 10 centimeters in diameter. Purple Turnip tops are best enjoyed young as they will be mildly sweet in flavor with a hint of pepper and will become bland and tough in texture as they mature.

Purple Turnip tops are botanically known as Brassica rapa and are members of the mustard family, which also includes cauliflower and cabbage. Purple Turnip tops can often be confused with rutabagas but can be differentiated by its size and color. Rutabagas are larger that Purple Turnip tops and will have a yellowish-purple skin and yellowish flesh. The purple coloring in Purple Turnip tops is due to the presence of anthocyanins that research has shown to have anti-cancer properties.
