Description/Taste
Kabocha squash is a hard winter squash that is a slightly flattened sphere shape, with a dull, deep green, thick mottled rind, with pale, uneven stripes. Seeds and strings in the central cavity are characteristically oily to the touch. It ranges from one to eight pounds but generally weighs an average of two to three pounds. When cooked the deep yellow-orange pulp is finely grained, floury-dry and tender. Kabocha squash is rich in flavor and combines tasting notes of sweet potato and pumpkin.
