O’Henry sweet potatoes are medium to large in size and are long, oblong, and cylindrical in shape with tapered ends. The thin, light tan skin is smooth with shallow eyes and some dark brown spots dotted across the surface. The white to pale yellow flesh is firm, dense, and moist. When cooked, O’Henry sweet potatoes are creamy and sweet, similar to that of orange-hued sweet potatoes, and boasts nuances of nuts and honey.
O’Henry sweet potatoes are available year-round, with peak season in the fall.
O’Henry sweet potatoes, botanically classified as Ipomoea batatas, are members of the Convolvulaceae or morning glory family. O’Henry sweet potatoes are a light skinned and white fleshed variant of the orange beauregard sweet potato. Their success in the commercial marketplace has dwindled in recent years as new varieties of white-fleshed sweet potatoes have arrived in the marketplace increasing competition.
