These immature onions have long, hollow green stalks and are entirely edible. Green onions differ from scallions as they have a tiny bulb. True scallions are actually even younger and have no bulb at all. The flavor is mild but can be used in countless dishes.

Containing valuable chemicals touted as disease-fighters, research shows that eating half an onion a day increases the "good kind" of cholesterol, increases circulation, prevents blood clots and lowers blood pressure.
