Bearss limes grow on a nearly thornless tree and produce white blossoms and fruit approximately 2 to 2 ½ inches in diameter. Bearss limes have a thin, smooth, skin that ranges from dark green to a pale green when ripe. The flesh of the fruit tightly clings to the flesh, and the pulp is light greenish-yellow when ripe.
Bearss limes are available from late fall through winter months.
Bearss limes also are known as Tahiti lime, Persian lime and botanically as Citrus latifolia. Bearss limes take their name from T.J. Bearss, who discovered the limes in 1895.
