Description/Taste
Laubacher Farms Direct is a family-owned and operated organic farm located in Camarillow, California. The farm is dedicated to growing a wide variety of vegetables including carrots, beets, fennel, and greens. Red carrots widely vary in size and are narrow to conical in shape, tapering to a point on the non-stem end. The skin is smooth, firm, and ranges in color from red, maroon, to red-purple. Underneath the surface, the flesh is crisp, orange to pale yellow, and dense with a higher water content than orange carrot varieties. Red carrots are crunchy with a snap-like quality and have an earthy, sweet flavor. In addition to the roots, the leafy tops are also edible and have a fresh, slightly bitter, vegetal taste.
Seasons/Availability
Baby Red Carrots are available from McGrath Family Farm fall through spring.
Nutritional Value
Red baby bunch carrots are high in beta carotene. They contain lycopene, a pigment also found in tomatoes and watermelon. Studies show that lycopene helps prevent heart disease and some cancers including prostate cancer. Purple carrots contain anthocyanins, pigments that act as powerful antioxidants and also help prevent heart disease by slowing blood clotting.
Ethnic/Cultural Info
Carrots were originally purple, however, other colors such as red, white and yellow also appeared in Asia thousands of years ago.
