A mix of three currently harvested varieties of carrots on any given day, this colorful carrot mix creates an attractive presentation. Each mix consists of richly colored Black Knight or Purple Haze and either yellow or white varieties.

Carrots are used widely in both sweet and savory dishes. Diced carrots, along with celery and onions are a key ingredient in soup stocks and broths. Cook carrots with onions, vegetable broth and ginger, then puree into soup. Pickle carrot slices with onions, jalapeno, oregano and vinegar. Add grated carrots to muffin batter and cakes, or combine with Moroccan spices and feta for a cold salad. Sautee carrot halves in olive oil and butter, add whiskey, sugar and reduce until glazed. Roast root vegetables and carrots with balsamic vinegar and olive oil until tender and caramelized. Grated carrots may even be added to custard, flavored with curry, and frozen for an exotic take on ice cream. Carrots will keep in cool, dry storage for up to a month. Scrub thoroughly or peel to prepare.
Carrots were originally purple, however, other colors such as red, white and yellow also appeared in Asia thousands of years ago.
