McGrath Family Farms is a collection of organic farms in the Oxnard Plain of Camarillo, California. The farms are run by multiple generations of the McGrath family and span 5,000 acres. The McGrath family has been farming in this coastal region since 1868, and their regenerative practices help to create fertile soil that can produce crops year-round. Red carrots widely vary in size and are narrow to conical in shape, tapering to a point on the non-stem end. The skin is smooth, firm, and ranges in color from red, maroon, to red-purple. Underneath the surface, the flesh is crisp, orange to pale yellow, and dense with a higher water content than orange carrot varieties. Red carrots are crunchy with a snap-like quality and have an earthy, sweet flavor. In addition to the roots, the leafy tops are also edible and have a fresh, slightly bitter, vegetal taste.
Baby Red Carrots are available from McGrath Family Farm fall through spring.
Red baby bunch carrots are high in beta carotene. They contain lycopene, a pigment also found in tomatoes and watermelon. Studies show that lycopene helps prevent heart disease and some cancers including prostate cancer. Purple carrots contain anthocyanins, pigments that act as powerful antioxidants and also help prevent heart disease by slowing blood clotting.
Carrots were originally purple, however, other colors such as red, white and yellow also appeared in Asia thousands of years ago.
