Sprouting cabbage has loosely packed leaves in heads about the size of a golf ball. They resemble a cross between small romaine lettuce heads and Brussels sprouts. Their flavor is milder and sweeter than the main cabbage head. Use the sweet crispy leaves raw or lightly sautéed.

Cabbage is a cool season vegetable botanically classified as Brassica oleracea.
