Description/Taste
Coleman Family Farms is a multi-generational farm growing a variety of herbs, vegetables, and edible flowers in two locations: Ventura and Carpinteria, California. The Coleman family has been farming in Central California since 1963, using biodiverse and pesticide-free farming practices. Arugula is a vibrant green leaf, often with a long, pale green stem. Arugula can be harvested in many stages along the growth curve, starting when the leaves are young and mild in flavor until they are fully mature, about 7 to 10 centimeters in length. This green offers an herbaceous, spicy, peppery flavor with tasting notes of mustard.

Current Facts
Arugula is botanically classified as Eruca sativa, and also known as salad rocket, roquette and rucola. As a member of the mustard or Brassicaceae family, the entire plant exhibits the family’s characteristic peppery bite. The pungent flavor is due to its high content of sulfur containing compounds known as glucosinolates. The leaves are commonly used as a salad green or herb in fresh sauces such as pesto.
