Cot-N-Candy Aprium® fruits are small to medium in size, averaging 5-10 centimeters in diameter, and are oval to round in shape. The skin is smooth, medium-thick, and orange-yellow with red-pink blush, and a faint velvety layer of fuzz lightly covers the surface. Underneath the skin, the flesh is firm, dense, and white to light orange, encasing an inedible, brown pit. Cot-N-Candy Aprium® fruits are moderately juicy with a balanced sweet, acidic flavor and have a prominent, plum-like aftertaste.

Cot-N-Candy Aprium® fruits are an interspecific variety developed over many years through open pollination at Zaiger Genetics in Modesto, California and includes both apricot and plum in its parentage. Considered to be an early-ripening fruit that grows on a compact tree reaching two meters in height, Cot-n-Candy Aprium® fruits are a freestone fruit, meaning the hard pit will easily separate from the surrounding pulp when ripe. Cot-N-Candy Aprium® fruits are a specialty variety favored for its complex, fruity flavor.
Cot-N-Candy Aprium® fruits are an excellent source of vitamins A and C and also contain some iron, calcium, and fiber.
Cot-N-Candy Aprium® fruits are best suited raw as their fruity flavor is showcased when consumed fresh, out-of-hand. The fruits can also be sliced and tossed into green salads or fruit salads, canned for extended use, or utilized in desserts such as tarts, ice cream, pies, and cakes. Cot-N-Candy Aprium® fruits pair well with arugula, shallots, fennel, pistachios, almonds, white balsamic vinegar, honey, plain yogurt, berries, honeysuckle, and mild cheeses such as ricotta, Brie, and mascarpone. The fruits will keep for 2-4 days when stored at room temperature and once ripe, they should be stored in the refrigerator where they will keep for an additional 1-2 days.
Zaiger Genetics filed a United States Plant Patent for the Cot-N-Candy Aprium® in 2005 and was granted the patent in 2007. Zaiger Genetics, the creator of the Cot-N-Candy Aprium®, is a family-owned breeding program that uses natural cross-breeding techniques to create new hybrids that have distinct flavors and textures. Cot-N-Candy Aprium® fruits are just one of the many new hybrids that are known as interspecific varieties, meaning the fruits are naturally cross-bred from two or more species, and these hybrids can take many years to generations to develop. In addition to the Cot-N-Candy Aprium®, Zaiger Genetics has also released many well-known interspecific species, including the Pluot®, NectaPlum®, and Peacotum®.
Cot-n-Candy Aprium® fruits were developed by Zaiger Genetics at an experimental orchard located near Modesto, California. The trees were grown from seed and were collected from open-pollinated apricot selections from the company’s proprietary interspecific seedlings. In 1998, a successful budded seedling that exhibited desirable fruit was selected for additional propagation, and the variety was released in 2005 to select growers for commercial production. Today Cot-N-Candy Aprium® fruits are found at select farmers markets, specialty grocers, and fruit stands in the United States. The variety is also available for purchase online for home garden use and has been ordered by gardeners in the United Kingdom and the United States.
