Description/Taste
Shanghai bok choy is the young, petite and tender counterpart to mature bok choy. Its spoon-shaped kelly green leafy blades are supported by translucent and succulent white to pale green stalks that join at a common base above the root. The thin stalks are tender, crunchy and succulent with cabbage notes and sweet pea undertones.
Current Facts
Shanghai bok choy is also simply referred to as baby bok choy. It is a type of Chinese cabbage of the Chinensis species; the other species is called Pekinensis. Chinensis varieties do not form heads, rather they grow leafy blades much like celery. The two cultivars of bok choy that are most often harvested at the baby stage are Ching-Chiang and Mei Qing Choi.
