Description/Taste
Micro Citrus Mix™ consists of very small leaves connected to slender stems, and the leaves range in shape from flat, elongated, and oval to serrated, frilly, and deeply lobed. The leaves also vary in color from dark green to a deep red, burgundy hue. Micro Citrus Mix™ has a soft, crisp, succulent, and tender consistency. Within the mix, each microgreen has a distinct flavor, including notes of lemon, lime, tangerine, and anise, but in combination, the mix provides a delicate blend of bright and zesty, citrus flavors with a clean, herbal finish.
Seasons/Availability
Micro Citrus Mix™ is available year-round.
Current Facts
Micro Citrus Mix™ is a blend of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The herbaceous mix is a modern twist on classic citrus flavors combined with new, zesty notes curated by Fresh Origins Farm to provide chefs with elevated ingredients. Micro Citrus Mix™ incorporates microgreens with strong citrus flavors, including but not limited to micro mint lemon™, micro basil lemon, micro sorrel, and micro tangerine lace™. The microgreens are generally harvested 1 to 2 weeks after sowing, and chefs use the greens as an accent in savory and sweet dishes. Micro Citrus Mix™ provides a vibrant blend of flavors selected for their bright, bold, citrus notes and aromatic nature. The refreshing mix also adds visual depth with its multi-colored, expressive appearance and can be individually placed on small plates or sprinkled across larger preparations for greater impact.
Nutritional Value
Micro Citrus Mix™ provides multiple vitamins and minerals due to its mixture of herbs with unique nutritional properties. The greens are a source of magnesium, potassium, calcium, and phosphorus, and they also contain some vitamin C, which is an antioxidant that has been shown to help strengthen the immune system. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Citrus Mix™ is best used fresh as an edible garnish. The delicate greens cannot withstand high heat and should be added at the end of the cooking process to prevent the leaves from wilting. Micro Citrus Mix™ has bold, citrus flavors that complement seafood dishes. The microgreens can be used as a bed of greens underneath fish or crab, sprinkled over ceviche, or the leaves can be strategically placed on lobster dishes to add color, flavor, and texture. Micro Citrus Mix™ can also be scattered on top of salads, floated on top of soups, curries, and stews, or served with roasted meats. In addition to savory applications, Micro Citrus Mix™ can be served over desserts or muddled into cocktails for added flavor. Micro Citrus Mix™ pairs well with fruits such as watermelon, grapefruit, pineapple, and mango, beets, arugula, cinnamon, cheeses including parmesan and ricotta, crème fraiche, miso, poultry, and seafood. Micro Citrus Mix™ will generally keep 5 to 7 days stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
Citrus has been used in medicinal and ornamental practices since ancient times, but its popularity as a flavoring in culinary applications was not established until the 13th century in the Middle East and the 15th century in Europe. Over time, the use of citrus has remained somewhat the same, but in the late 20th and early 21st century, Fresh Origins Farm has captured the essence of citrus through innovative microgreens and has added another dimension to the way chefs can create flavors in their dishes. Micro Citrus Mix™ is produced year-round, providing chefs with a consistent supply of citrus-forward greens to enhance savory and sweet dishes. The microgreens are also suitable for light transport, allowing them to be individually packaged for to-go orders. In the fall of 2020, due to the coronavirus, takeout was transformed through the creativity of chefs from pre-packaged meals into individual, unique experiences. Micro Citrus Mix™ provides added color, flavor, and texture to dishes beyond what is typically prepared in domestic kitchens, elevating the home dining experience. In addition to Micro Citrus Mix™, Fresh Origins Farm has created over thirty unique microgreen mixes to provide chefs with elevated, procured flavor combinations.
