Kabocha squash is a hard winter squash that is a slightly flattened sphere shape, with a dull, deep green, thick mottled rind, with pale, uneven stripes. Seeds and strings in the central cavity are characteristically oily to the touch. It ranges from one to eight pounds but generally weighs an average of two to three pounds.
