Butter lettuce is a leaf lettuce. Leaf varieties have loose heads and are known as the "cut and come again" lettuces as they can be harvested multiple times from a single plant. They are great short season varieties as well as more heat-tolerant than head lettuce.
Applications
Butter lettuce's large, tender, mild flavored leaves lend themselves to a number of culinary applications. Add to salads or sandwiches, or use whole leaves as cups to hold fillings such as minced chicken or Korean BBQ. It's vibrant color also makes it perfect for garnishing serving dishes and buffets.
