Anaheim chiles are commonly used to make chiles rellenos. However, they can be included in a number of dishes that call for a mild, sweet chile. To get the most flavor out of the chile, roast it until the skin is charred and then peel off the skin. Chop or puree and add to stews, soups, salsas and sauces.
Geography/History
Anaheim is a generic name for several long green chiles. Originally New Mexican in origin, they were later grown in Southern California, around Anaheim. Now, they're no longer a significant crop in that region. "New Mexico" is the preferred name now used instead of "Anaheim." When dried, they are sometimes called "chile colorado."
