Balsamic Date Spread over Brie on Baguettes
Serves 6 to 8

1 tablespoon extra-virgin olive oil
1/3 cup pine nuts
1/2 cup Medjool dates, pitted, and coarsely chopped
1 tablespoons honey
2 tablespoons aged balsamic vinegar
8-ounces French brie, at room temperature
1 baguette, sliced 1/2-inch thick, and toasted

1. In a small non-stick skillet, heat the oil, and toast the pine nuts until they begin to turn golden.
2. Add the dates, honey and vinegar, and cook, until the mixture thickens. Remove from the heat.
3. Spread the brie onto the baguette and top with some of the date mixture, and serve.
