Only 1% of the total food grown and harvested in the United States is sold at farmers markets. 2% of the nations farms “raise” 40% of our food animals. That means agribusiness, factory farming, monoculture and global food distribution are the Goliath to the sustainable movement. Radical change would require dramatic force and collective action.

I’m surprised by how many leaves your recommended removing in the first section. There is generally a lot of good meat in there!
As for the video – made me dizzy. I would recommend finding a stable camera angle that covers the area needed and put it on a tripod. Then have your demo person lean in to the camera for close ups. Way too much camera moving.

Thanks for the feedback Becky! – I thought the same thing about the leaves, because I want all of it, but when I think back, I always end up over-cooking them b-cuz the outer leaves are much more tough!
And next time, we’re definitely using a tripod & some lighting! … Just curious if you posted your comment on FB & then on here, or if the Networked Blogs application transfers it automatically?
