Sweet and peppery, the firm white flesh of young turnips offers a delicate mild flavor somewhere between a crisp radish and a tart apple. These marble-size turnips are often marketed with their edible, green leaves attached, a definite sign of freshness.
Locally grown in California at Coastal Organics, turnips have been cultivated for centuries for both culinary and medicinal purposes. Turnips, botanically named Brassica rapa, are believed to have origins in Scandinavia or Russia. Northern Europe has considered them a staple food for a very long time.
