The Sierra Gold is considered a russet cultivar, though it took more than a russet to give it its trademark characteristics. It is highly regarded for its culinary qualities and for its resistance to disease and after cooking-discoloration.
Sierra Gold potatoes are a unique pedigree of a Russet and a Yukon Gold, giving them the distinct hybrid characteristics of both varieties: hearty, earthy skin, deep yellow flesh with a creamy texture and a toasted, buttery flavor. Younger Sierra Gold potatoes are round and as they mature they become more oval in shape.
The Sierra Gold potato is considered a versatile all-purpose potato. It can be baked, fried, boiled and even microwaved.
The Sierra Gold's first inception was created by the Texas Agricultural Experiment Station under the name, TX1523-1Ru/Y. It was released for commercial production in 2003, making it a rather new potato variety in the marketplace, thus it is relatively obscure. it is considered to be the very first Russet type cultivar to be introduced to the United States.
