
Radicchio
Cooking radicchio brings out the vegetable's natural sweetness but it can also be served fresh. Grill radicchio halves and combine with cooked white beans and balsamic vinaigrette.
Green Swiss Chard
Swiss chard leaves grow on a pale whitish-green stalk. Shiny and dark green, the crinkly green leaves offer a taste that lies somewhere between asparagus and celery with possibly a hint of beet.

Most of the U.S. crop is grown in San Diego county where the fruit flourishes. Avocados are harvested mature but hard and ripen after picking. Peak season avocados will give slightly when you hold them in your hand.

Buttery, rich and smooth flesh is tucked underneath a semi-rough black skin when ripe.
Applications
Great for slicing and mashing.
Geography/History
Dubbed the alligator pear long ago, avocados landed in California in the mid nineteenth century. Their popularity only rose in the early 20th century though. Postman Rudolph Hass discovered this subtropical Central American native and grafted the Hass variety at his orchard in La Habra Heights, CA in 1926.
