Rutiz Farms grows emerald variety from seed and as an annual plant, and only harvests from the plant for one season before plowing them under. The Emerald variety is favored because it is thorn-less.
The emerald artichoke variety can range from small to large size. Each artichoke is a bright green, with meaty flesh.
