Yucca, or Cassava, leaves are palm-like in shape and splay out from a central point. There are typically 5 to 7 lobes that each contain a light green-yellow central vein that runs from the base of the stem down the length of the lobe. Yucca leaves must be cooked before consuming and traditionally are treated like other cooking greens imparting a savory and slightly bitter undertones.
Yucca leaves are available year-round.
