Description/Taste
The White creamer potatoes are the young immature and tender version of a common white variety potato. The skin is pale burlap in color, thin and rich in moisture content. The flesh is not white, rather a creamy yellow. Its flavor is creamy and texture, waxy. When cooked the potato's flavors are mild and buttery with an airy textural quality.
Applications
Although creamer potatoes are great for boiling and roasting, they make a great fryer potato and are the principal ingredient in "Tim's Cascade Chips" - the name, a nod to the white variety of potatoes used to make the chip.
Geography/History
Genetic testing of a wide variety of cultivars and wild species suggests that the potato has a single origin in the area of southern Peru. Having hundreds of cultivated varieties to rely on for culinary purposes has allowed potatoes to adapt to different growing conditions throughout centuries. Hybrid varieties of white potatoes have been created to improve upon their wild ancestors' cosmetic features, flavor and their ability to survive.
