Galia Melon

Description/Taste
Sea beans are an emerald green, wild vegetable. Some have spiky, green leaves that look like a cactus without needles. Others closely resemble Chinese long beans, while still others have a branch-like appearance. The flavor if sea beans is briny, with a crunchy texture.

Geography/History
Originally found only in the wild primarily flourishing on the coasts of Europe, this edible plant is now cultivated on the compatible desert coasts of the Sea of Cortez. Growing in pure seawater, the plant readily seizes and absorbs the nutrients and vitamins of the ocean. The variety of sea bean in the United States is Salicornia, and grows near salt marshes.
