Roselle may be used raw, dried or juiced. The fruit's tart flavor requires a sweetener of some kind, and it is successfully used like a cranberry in recipes for jam, jelly, chutney and even wine.

The fruit of the Barrel cactus is best prepared in sweet applications, since its natural tartness lends itself well to a hint of sugar. Cook the fruit down with agave syrup to make a jam, jelly or a sweet and sour chutney.

Santol are round fruits that have the outward features of a peach; yellow to golden in color with a red blush and slight fuzz. The fruit may have a thin peel or a thick edible pulp inside the rind with a thin, milky juice. Depending on the variety, the segmented central pulp that surrounds inedible brown seeds will range from sweet to sour. The flavor of ripe, sweet Santols have mild peach and apple notes combined with the pulpy texture of apples.
The Santol fruit is available during the summer and fall.
