The Red Thumb fingerling potato is defined primarily by its shape, size, and texture. Measuring about two to three inches in length and tubular in shape, its given name suggests it has the appearance of a thumb. The skin of the Red Thumb fingerling potato is ruby hued and semi-smooth. Its flesh, marbled with pink and creamy white coloring, is waxy and firm. This is a trademark texture of nearly all red potato varieties.

Red Thumb fingerling potatoes, botanically known as part of, Solanum tuberosum, are one of the hundreds of varieties of red potatoes. Their fingerling status simply defines them as a cultivar of potatoes that naturally grow to a petite and slightly cylindrical shape and size. They are a late-season variety that is highly regarded for their uniform size, disease resistance and storage qualities.
Red hued potatoes such as the Red Thumb fingerling offer iron, vitamin C, zinc, copper, potassium, and fiber. Additionally, potatoes offer an excellent source of starch and carbohydrates.
The Red Thumb potato is an all-purpose potato and can be used in most recipes where potatoes are called for. They can be roasted, grilled, steamed, boiled, and fried. Their petite size, however, does make them ideal for particular preparations. The can be used halved or whole along with other fingerlings to make a roasted potato medley, or they can be steamed, smashed slightly, and then baked. Like many fingerlings, the Red Thumb holds its shape well when cooked and makes an excellent salad potato. The Red Thumb also will hold its color when cooked, particularly when the skin is left on. To store Red Thumb fingerlings keep in a cool, dry location and use within one to two weeks. Do not refrigerate raw potatoes as this causes them to spoil faster.
Red Thumb fingerling potatoes were 1 of 5 varieties of potatoes planted in the White House kitchen garden by First Lady Michelle Obama and volunteer Girl Scouts in 2012. The garden planting was a part of the First Lady’s “Let’s Move” campaign which focuses on encouraging exercise and healthy eating among school-aged children.
The first red potato is believed to have originated in Peru where it has long been a staple food. Having hundreds of varieties to rely on for culinary purposes has allowed red potatoes to adapt to different growing conditions throughout centuries. The Red Thumb fingerling is a more modern variety that is said to resemble some of these original red potato cultivars. New varieties of red potatoes, including the Red Thumb, have been created to improve upon their wild ancestors' ability to survive. Since the early 2000’s the demand for petite sized potatoes and multi-colored potatoes has increased both on the home consumer front as well as amongst chefs and restaurateurs.
