Description/Taste
Producing graceful, feathery jagged-edged green leaves, red mizuna grows in a bushy clump. This Asian specialty vegetable can mature into a red head that measures up to nine inches high and eighteen inches across. Mizuna is most often marketed in separate leaves that have been harvested when young and tender. Young red mizuna leaves measure only one-and-one-half inches long and about one inch across. Reminiscent of peppery arugula, young red mizuna offers a much sweeter, milder taste and a fresh earthy flavor. Mature red mizuna stalks are quite juicy and offer their own special flavor. Delicately-fringed red mizuna is often found in a mix of baby greens or mesclun.
Nutritional Value
Low in calories, lettuce varieties are a dieter's delight and salvation as they healthy eating without an abundance of calories.
Applications
Raw or cooked, the slightly crunchy leaves have a nutty, peppery flavor. Braise, sautee or serve fresh. To store, place in a plastic bag; keep in crisper drawer of refrigerator. Do not wash until ready to use; rinse briefly in cold water. For optimum flavor and texture, use within three to five days.
Geography/History
Red mizuna is locally grown at Coleman Farms, Carpinteria, California. One of the Asian greens, mizuna is a mild Japanese mustard and one of the best known in the United States. This special green is especially favored in European and Asian cuisine.
