Two characteristics set the Maui onion apart from other yellow onions: the high sugar and high moisture content of its flesh.
Cantaloupe Melon
The cantaloupe is defined by two elements: its roughly netted stone and green colored skin and its aromatic orange-coral colored flesh. When perfectly ripe, the flesh is juicy, unctuous and sweet.
Ramp cloves are available in late Spring.
Description/Taste
Ramp cloves are the bulbous, bottom-end of the ramp, having no greens and no tops. Intensely flavored, ramp cloves offer a strong, garlic-onion flavor that is more concentrated than ramp greens.
Applications
Ramp cloves may be used as a substitute for garlic cloves or whole ramps. Prepare whole or minced, fresh or cooked. Pair with spring vegetables and herbs, such as morels, asparagus, artichokes, peas, fava beans, mint, seafood and poultry. To store, keep dry and refrigerated until use.
