O’Henry sweet potatoes, botanically classified as Ipomoea batata, are a member of the Convolvulaceae or morning glory family. O’Henry sweet potatoes are a light skinned and white fleshed variant of the Orange Beauregard sweet potato. Their success in the commercial marketplace has dwindled in recent years as new varieties of white-fleshed sweet potatoes arrive in the marketplace increasing competition.
