Pink lemons are variegated, with green and off white stripes on the rind. Inside, the flesh is a rose-hued pink. As the lemons mature the stripes fade and the color of the pink flesh intensifies. Pink lemons have a tangy and tart flavor, a rich lemon scent and very few seeds if any. The green and white variegated leaves are highly fragrant, and are considered the most fragrant among lemon trees. Pink lemons become less acidic with age and offer a sweeter flavor than common lemons. They are best suited for their juice and their zest, however, the juice is not nearly colorful as the pink citrus segments.
Pink lemons are available year-round with a peak season in the late fall through early spring months.
Pink lemons are a variety of Citrus limon, also referred to as the Variegated Eureka lemon, or even the Pink Lemonade lemon. The striped, pink-fleshed lemon was discovered on a single branch of a regular Eureka lemon tree. Pink lemons are not the heavy producers that their yellow cousins are, so are generally more limited in their availability.

In the late 1800s a vendor selling lemonade ran out of water for his lemons, and according to the story, he used water from a basin that had just been used to wash the red tights of a circus performer. Hence, the pink color. The circus vendor sold the oddly colored lemonade as 'strawberry lemonade.'
The Pink lemon is a spontaneous mutation that was first discovered on an ordinary Eureka lemon tree in Burbank, California around 1930. Pink lemons are popular with home gardeners and growers as both an ornamental and a citrus tree. A major citrus grower has also grown this variety and coined it, Zebra lemon, for its striped rind.
