Petite™ Watercress produces brilliant green, circular-shaped leaves with tender wispy stems. Their bright spicy and flavor is just as potent as the fully mature plant, but with a more delicate texture. Petite™ Watercress offers a peppery flavor akin to horseradish, delivering a clean sharp burn to the palate that soon dissipates leaving notes of citrus and fresh grass.

Watercress is botanically known as Nasturtium officinale and is a member of the Brassicaceae family. Petite™ Watercress and many other Petite™ Greens can be found at Fresh Origins Farm, a leading producer of microgreens and Petite™ Greens since the 1990s. Petite™ Watercress grows just like micro watercress; usually planted in growing trays in greenhouses. They are left to grow a few days longer than microgreens, between 2-3 weeks, and cut right above the soil when they reach about 2 to 3” tall.
Petite™ Watercress contains iron, potassium, calcium, iodine, folic acid, antioxidants and vitamins A and C.
Petite™ Watercress has a moderate peppery bite that is best suited for savory dishes. The delicate leaves will wilt if exposed to prolonged heat, and are intended for raw applications. The peppery flavor of Petite™ Watercress is ideal with game meats such as duck or fruits that have a tart flavor like the sour cherry. Try floating Petite™ Watercress on wonton or egg drop soup for an extra peppery flavor. Complimentary flavors include parmesan cheese, feta cheese, goat cheese, mozzarella balsamic vinegar, lemon, mint, cucumber, tomato, olives, garlic, beets, fennel, pears, grapes, prosciutto and roast beef.
Petite™ Greens were once only available to restaurant chefs as a fancy garnish but has become more widespread. In recent years, the growth of the local food movement has increased the popularity of Petite™ Watercress as well as other locally sourced other microgreens.
The Petite™ Green products from Fresh Origins have been a work in progress since 1995 from the farm’s owner and founder, David Sasuga. After growing flowering plants for 20 years, David always wanted to grow fresh produce and the opportunity came unexpectedly when a local chef bought some of his basil seedlings. It was then that David began producing Petite™ Watercress and other varieties of tiny, fresh-cut seedlings. There are over 125 different Petite™ Green products including, Petite™ Edamame™, Petite™ Fava Leaf, Petite™ Iceplant™ as well as mixes such as, Petite ™ Amaranth Carnival Mix™, Petite™ Licorice Mix™, and Petite™ Primavera Mix™.
