Petite® Italian Parsley is small in size, averaging 7-10 centimeters in length, and has small, flat, and deeply lobed leaves with long, slender, and thin stems. The vibrant green leaves are smooth and have scalloped-edges, and the pliable stems are light green and crisp. Petite® Italian Parsley is tender with a fresh, strong grassy aroma and a tangy, green flavor mixed with notes of nutmeg, citrus, clove, reminiscent of celery, lemon, and pepper.

Petite® Italian Parsley is a young edible version of the mature herb and is a part of a trademarked line of specialty greens grown by Fresh Origins Farm in San Diego, California. Designed to be slightly larger than microgreens, Petite® Italian Parsley is harvested 4-6 weeks after sowing. This delicate Petite® Green offers a full-bodied grassy flavor with a tender texture and is used as a garnish in a variety of culinary dishes.
Nutritional Value
Petite® Italian Parsley is a good source of minerals such as iron, potassium, calcium and is high in antioxidants such as vitamin A and vitamin C. It also contains vitamin K, fiber, magnesium, niacin, and heart-healthy folic acid.
Applications
Petite® Italian Parsley greens are best suited for raw applications and are most often used fresh as a garnish. They can be added to mixed vegetables, meat dishes, pasta with tomato or cream-based sauces, salads, soups, stews, and casseroles. They can also be added to potato dishes and placed in sandwiches. Petite® Italian Parsley pairs well with basil and oregano, meats such as poultry, beef, lamb, and fish, peppers, onions, squash, risotto, rice pilaf, capers, garlic, tomato, potato, and fresh shelling beans. They will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.

Throughout history, Italian parsley has come to have many different symbols and meanings. For instance, the Hebrews viewed parsley as a symbol of Passover that represented spring and rebirth, while the Greeks used parsley as a funeral herb or offering, used to make wreaths. In modern day, Petite® Italian Parsley is used for its actual flavor, texture, and color rather than as symbolic imagery, but it did mark a new trend that became popular in the 1990s in California. Chefs began looking for a unique way to add visual appeal to their culinary presentation, and Petite® Greens provided an innovative green to create contrast and develop layers of flavor. Petite® Greens are still inspiring chefs today, and they are slowly becoming popular for home use as well as in restaurants.
Geography/History
Parsley is believed to be native to the central Mediterranean and has been cultivated for more than two thousand years. It was then introduced to the United States in the 17th century via immigrants and travelers, and Petite® Italian Parsley was created by Fresh Origins Farm in San Diego, California in the 1990s-2000s. Today Petite® Italian Parsley can be found through select partners of Fresh Origins, such as Specialty Produce, and are available across the United States.
