Petite™ Arugula resembles the fully grown version of the vegetable, only in a smaller format. The gently toothed leaves are a verdant green color and average 10 centimeters in length. They have tender wispy stems that are occasionally streaked in burgundy. Petite™ Arugula is herbaceous and nutty with the classic peppery bite reminiscent of mustard and citrus. Though delicate in comparison to fully grown arugula leaves, they are considerably more hearty than micro arugula greens.
Petite™ Arugula is available year-round.
Petite™ Arugula is an early harvest of the mature annual herb known botanically as Eruca sativa, a member of the Brassicaceae family. It is part of a Trademarked line of specialty greens grown by Fresh Origins in San Marcos, CA. Designed to be slightly larger than microgreens, they are harvested after 2-4 weeks of extra growth. They offer more robust flavor, bolder color, sturdier texture and ultimately more versatility.
Petite™ Arugula is high in vitamins A and C, calcium, folic acid, glucosinolates (GSLs), and phenols that are believed to help fend off environmental toxins.
Petite™ Arugula greens offer a robust flavor and delicate texture. With its moderately strong peppery bite best suited for savory dishes, and delicate leaves that wilt if exposed to prolonged heat, this arugula is best suited for raw applications. Petite™ Arugula is best used lightly dressed with a bright vinaigrette and a sprinkling of salt then placed atop pan seared fish, roasted chicken or pork, or hearty soup or stew. Complimentary flavors include parmesan cheese, feta cheese, goat cheese, mozzarella balsamic vinegar, lemon, cucumber, tomato, olives, garlic, beets, fennel, pears, grapes, and prosciutto. Use citrus' like grapefruit or Meyer lemon, acidity from vinegar and salt to enhance the flavors of Petite™ Arugula.
Petite™ Arugula, like micro arugula, is used mostly by restaurant chefs. They have become increasingly popular with consumers as the local food movement continue to grow, and people seek out less processed, healthier food items.
The Petite™ products from Fresh Origins have been a work in progress since 1995 from the farm’s owner and founder, David Sasuga. After growing flowering plants for 20 years, David always wanted to grow fresh produce and the opportunity came unexpectedly when a local chef bought some of his basil seedlings. It was then that David began producing Petite™ Arugula and other varieties of tiny, fresh-cut seedlings. There are over 125 different Petite™Green products including, Petite™ Edamame™, Petite™ Fava Leaf, Petite™ Iceplant™ as well as mixes such as, Petite ™ Amaranth Carnival Mix™, Petite™ Licorice Mix™, and Petite™ Primavera Mix™.
