Pac Choi mustard greens have thick green leaves with a thick white stalk. The texture of both leaves and stalks is crisp, and the flavour is of mild cabbage and spinach, slightly sweet and has a hint of mustard.
Pak Choi mustard greens are available in the spring and fall months.
Pac Choi is a type of Chinese cabbage. There are two species of Chinese cabbage: the Chinensis and the Pekinensis. Pac Choi is a member of the Chinensis family. Chinensis varieties do not form heads; rather they grow leafy blades much like celery and mustard. Other names for Pac Choi include bok choy, joy choy, horse's ear, Chinese celery cabbage and white mustard cabbage.
